Melons and Greens Salad

INGREDIENTS

1 bunch kale or spinach

6 tbsp vegetable or olive oil

3 tbsp lemon or lime juice

3 tbsp balsamic vinegar

3 cups melon, (watermelon, cantaloupe, honeydew, etc.) cut into 1/2-inch dice

1 cup cucumber, peeled and diced

1/4 cup red onion, diced small

1/2 cup cheese crumbles, such as feta or goat cheese (optional)

Pinch salt, none if using cheese

1/2 tsp black pepper



DIRECTIONS

Rinse and dry kale. Remove and discard stems and chop into bite size pieces. If using spinach, rinse and dry.


In a bowl combine the kale/spinach with the oil, lemon juice and vinegar. Toss to coat. Add the salt, if using, and black pepper. Toss again.


Add the remaining ingredients and toss lightly to distribute in salad. Serve.



4 - 6 Servings
