Orange Salad

INGREDIENTS
3 oranges
1/4 walnuts, chopped (can also use other nuts such as pecans, cashews, peanuts or pistachios)
VINAGIRETTE INGREDIENTS
1/3 cup orange juice
1/2 cup vegetable oil (canola oil any neutral-flavored oil)
1 tsp dijon mustard
2 tsp honey
2 green onions thinly sliced, green and white parts
1/2 tsp poppyseeds
DIRECTIONS
Remove the peel and pith from the oranges. Cut each orange into slices or sections. Set aside.
Combine the vinaigrette ingredients and shake in a jar or whisk in a bowl.
Divide and place orange slices or sections on individual plates. Drizzle with the vinaigrette (you may have vinaigrette left over to use another time). Garnish with the chopped nuts. Serve.
