Spinach and Egg Skillet

Recipe by Partnership for a Healthier America




INGREDIENTS

4 strips bacon, diced

1/2 red onion, diced (or any type of onion)

1 10-oz package spinach, frozen, thawed with water squeezed out (or use 1 bunch fresh, cleaned with stems removed)

8 eggs

1/2 cup heavy cream

1/4 tsp nutmeg

1/4 tsp black pepper

1/2 cup Feta cheese crumbles (or other cheese such as cheddar or parmesan, grated)



DIRECTIONS

Fry bacon over medium heat, stirring, in oven-safe skillet, such as cast iron, about 2 minutes. Add onion to skillet as bacon continues frying. Sauté about 4 more minutes until onion is golden. Stir in spinach until heated, or wilted if using fresh.


Meanwhile, heat broiler. Beat together eggs, cream, nutmeg and pepper in a medium bowl. Stir eggs into mixture in skillet. Cook over medium heat until eggs are set at the edges, about 5-7 minutes. Transfer to broiler; broil until eggs are almost set in middle, about 3-5 minutes.


Sprinkle cheese over eggs; return to oven. Broil until set, 2-3 minutes. Let cool 5 minutes and cut into wedges.
