Caramelized Pineapple Oatmeal with Mandarin Oranges

INGREDIENTS
1 can (8 oz.) DOLE® Pineapple Slices
3 tbsp. packed brown sugar, divided
1/2 tsp. ground cinnamon
Pinch salt
2 cups old-fashioned oats
4 tbsp. yogurt
1/2 cup jarred DOLE Mandarin Oranges, drained
1/2 cup toasted coconut
DIRECTIONS
Drain pineapple; reserve juice.
Place pineapple slices in skillet; add 2 tablespoons reserved juice and 1 tablespoon brown sugar to skillet. Cook over medium heat until pineapple is golden on the underside, flip pineapple slices over and cook until golden. Remove from heat to cool slightly.
Combine remaining pineapple juice and water to equal 3-1/2 cups, pour into medium sauce pan, stir in remaining 2 tablespoons brown sugar, cinnamon and salt. Bring to a boil and stir in oats. Reduce heat to simmer and cook for 5 minutes, stirring occasionally.
Spoon oatmeal into 4 bowls. Top each bowl with pineapple slice, tablespoon of yogurt and garnish with mandarin oranges. Sprinkle with coconut.
