DOLE® Pineapple & Black Bean Rice

INGREDIENTS
1 tbsp vegetable oil
1 cup long grain white rice or whole grain brown rice
1 cup water
1 1/2 cups chunky salsa
1 cup DOLE® Pineapple Tidbits, drained and liquid reserved
1/2 cup pineapple juice from the DOLE® Pineapple Tidbits can
1/2 cup canned black beans, rinsed and drained
Juice of 1/2 lime
DIRECTIONS
Heat the oil in a sauce pot until shimmering and add rice. Sauté for 2 minutes, stirring often.
Add water, salsa, pineapple tidbits, pineapple juice and black beans and stir to combine. Bring the mixture to a boil, reduce to a simmer, cover and cook for 20 minutes. Remove from heat, squeeze lime juice over rice and serve.
Prep: 20 mins 4 Servings
For perfectly cooked long-grain rice… TOWEL IT! Once the rice is cooked, carefully remove the lid from the pot, drape a kitchen towel over the top of the pot and replace the lid. Allow the rice to sit, off of the heat, for 10 minutes. The towel soaks up any excess moisture, leaving you with perfectly cooked rice every time.
