Spicy Mandarin Orange 4 Bean Salad

INGREDIENTS
1 can (20 oz.) DOLE® Pineapple Tidbits, drained
1 cup canned black beans, drained and rinsed
1/2 small red onion, diced
1/4 cup fresh cilantro leaves
Juice of 1/2 lime
1/2 lb. ground sausage
1 tbsp. unsalted butter
8 large eggs, beaten
Salt and freshly ground pepper
1/4 cup canned diced fire-roasted green chilies
1/2 cup shredded cheese of your choice
8 (6-inch) whole grain tortillas, warmed
Hot sauce
DIRECTIONS
Stir together pineapple tidbits, black beans, red onion and cilantro leaves in medium bowl. Season to taste with lime juice, salt and pepper. Set aside.
Cook sausage in large skillet, over medium-high heat, stirring to crumble sausage, until cooked through.
Melt butter in another large skillet over medium heat. Add beaten eggs, season with salt and pepper and scramble until eggs are just beginning to set. Stir in green chilies and cheese and cook 1 minute.
Top each tortilla with spoonful cooked sausage and scrambled eggs. Serve with pineapple bean salsa and hot sauce.
